Last week I made some delicious meatloaf. I know, I’m with ya. I still think the word meatloaf sounds so disgusting, and really, who makes meatloaf?? However, I am here to prove you wrong. The entire pan was gone that night…. and the only two people eating were me and my husband. (Embarrassing or compliment… I can’t decide.)
Anyway, I made the recipe up as I went with whatever ingredients I could find in my kitchen. I’ve made meatloaf before using a recipe, but I couldn’t find it and decided I could create something else from memory.
Lesson learned: double this recipe next time!
Ingredients:
1 lb of ground beef
1/4 onion chopped up very finely
2 tbsp worcestershire sauce or soy sauce (or both)
2 tbsp ketchup
2 tsp Regas seasoning
2 tsp steakhouse seasoning
1 tsp minced garlic
salt & pepper to taste
ketchup to squirt on top
Directions:
1. Place first 8 ingredients together in a mixing bowl. Use your hands if you’re awesome, or use a spoon if you’re not to mix everything together so that seasonings and sauces are mixed throughout.
2. Spray loaf pan with cooking spray. Transfer meat mixture to pan, and press down to fill in corners and make a smooth flat surface on top.
3. Squirt a small amount of ketchup on top of meat mixture (not enough to cover the whole thing, just about 2 tbsp or so spread around on top).
4. Place in oven, and bake at 350* for 20-25 minutes.
